Do you like pumpkin seeds? I love them! Maybe if you don’t like them you haven’t tried them when they are seasoned and yummy! Growing up I loved when we carved pumpkins as a family because that meant pumpkin seeds! I won’t lie it is some work to clean the seeds, dry them and all that but it is worth it!
We had a family pumpkin party this year & carved probably 12 pumpkins. I took seeds from probably only 5 good sized pumpkins. I ended up with about 8 cups of seeds. I picked through them all the best I could which is a little slimy & a slow process. Then I soaked the seeds & there it was easier to pick out the gunk. Then I laid the seeds out to dry on cookie sheets.
When it was time to cook the seeds I coated them each in these mixtures & then laid them on a cookie sheets. I lined the cookie sheets with tin foil & then put some tin foil in the middle to divide them so I could bake 2 kinds at a time.
I cooked the seeds at 350 degrees for 22-25 minutes & I flipped them once during that time. I love snacking on these seeds & it is a tradition I can’t wait to have with my family.
For all of these flavors I coated this amount over 2 cups of seeds. For every kind I would melt 2 tablespoons of butter in the microwave and then pour the butter & dry mixture over the seeds & coat them then spread them out on the tinfoil.
BBQ PUMPKIN SEEDS
1 Tbsp salt
2 tsp brown sugar
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
1 tsp chili powder
RANCH PUMPKIN SEEDS
2 Tbsp ranch dressing mix
1 tsp salt
EVERYTHING SEASONING PUMPKIN SEEDS
Using the Trader Joe’s Everything Bagel Seasoning seemed like a no brainer since it is good on everything!
3 Tbsp Everything Bagel seasoning.
CHOCOLATE PUMPKIN PIE SEEDS
I decided that I had to have one flavor of sweet seeds!
1 Tbsp unsweetened cocoa powder
2 tsp sugar
1 tsp cinnamon
1 tsp pumpkin pie seasoning
Of course I like just butter & salted seeds & those are good to start with but these flavored seeds are so fun! If you try them let me know which flavor is your favorite!
