I have something to admit. I don’t actually like bananas. Not even in smoothies, candy that is banana flavored etc. The only way I like bananas are in banana bread or banana cake. I normally make banana bread but this time made and adapted a banana cake that I like so much more! I also wanted to make a banana cake recipe without buttermilk because I never have that on hand! Now you might be thinking- what is the difference between banana bread and banana cake? Honestly not much haha. You can always add cream cheese frosting to make it more of a cake which is so yummy! I am excited to share this fun take on a classic banana bread recipe. After this post you won’t be asking yourself anymore how do you make a banana bread cake from scratch?
How Do You Make Banana Cake From Scratch? Here is What You Need!
- 1 stick butter- (melted)
- 1 cup brown sugar
- 3 eggs
- 2 teaspoons vanilla extract
- 4 very ripe mashed bananas (you can see how brown mine were haha)
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 Tablespoons granulated sugar to sprinkle on top
- 1/2 nuts if you would like- pecans would be good.
Instructions
- Preheat oven to 350 degrees. Spray an 9-inch square baking pan with nonstick baking spray.
- In a stand mixer, beat together the butter, brown sugar, eggs, and vanilla. Then mix in the bananas until combined.
- Then add the dry ingredients to the wet ingredients and stir until just combined. Stir in nuts if you want- or let’s be real- adding chocolate would be a good idea too!
- Pour the batter into the sprayed pan. Sprinkle the sugar evenly over the top.
- Bake for 35-40 minutes or until a toothpick comes out clean when inserted into the center.
- After cooling, cut into squares and enjoy!
